The protein powder in this recipe is optional. If leaving it out, this would really be a one-serving recipe with 20 g of protein from the tofu. The nutrition info below, however, includes one scoop of Nectar Chocolate Truffle protein powder. Adjust accordingly if you use a different protein or no protein at all. To use no protein at all, I would increase the cocoa powder to 2 tablespoons and increase the sweetener to 3 packets of stevia to make up for the flavor and sweetness from the missing protein powder.
1 12-ounce package lite silken tofu
1 scoop chocolate protein powder
1 tbsp unsweetened cocoa powder
2 packets stevia (to taste)
1. Blend all ingredients thoroughly in food processor or blender. All the tofu and powders should dissolve evenly. Pour mixture into a container and chill well.
Makes two servings:
3.5 g carbs (1 g fiber)
21.5 g protein
1 g fat
